DAILY ACTIVITY ( ENGLISH VERSION ) #10
Assalamualaikum warahmatullahi wabarakatuh.
Hello guys welcome back to my blog, as usual I will tell my
activities while in the kitchen.
Today we are still busy with croissants and sour dough, this
morning we made croissants because yesterday we made the dough so today it is
in shape.
First we take out our batter from the chiller first because
the mixture is a bit hard so the mixture is slightly soft before we roll, while
waiting for our soft dough to form a croissant fat first. The dough starts to
soften a little, right away, we start rolling the dough and at 07.35 a.m, we
have entered the first folding until 09.05, we have entered the process of
forming and proofing for two hours.
Oh yes ..., while the process of making croissants we also
make sour doug bread but only until the process of mixing the ingredients and
we save the dough into the chiller.
And the results of our croissants today are still not perfect,
the fat from our croissants is broken and our sour dough today is also not
good.
