          Helo Guys, welcome to my blog, today I will tell you my activities during practice in the kitchen laboratory.

      today we are one line at 08.00, our study material rotation 1.2 my group handle appetizer macedoine of vegetable mayonaise, we are not too bothered in preparation macedoine of vegetable mayonaise because we prepared it yesterday so we just plating, at 11 : 00 we start plating first we mix all vegetables put the mayonaise sauce stir well, and then plating with ring cutter to be naat and garnish with tobiko, mushrooms, and truffles. 



        At 12 : 00 open resto, first order 2 plates,then there are additional 10 plates,an edditional 8 plates,and th total of all order 37 pax this  ord makes us panic and hassles so we work quickly chef aldino came to see our work area he rebuked us because my work area is dirty and it becomes a positive correction for us to come next we pay more attention to the cleanliness of our work area,thankful all orders are completed on time without any complain from the guestappetizer that we prepared as much as 40 pax but that came out to restaurant 37 pax.


         At 01:30 the restaurant closes and we start to prepare rotation 1.3 my group handle desert is bika ambon.ingredient that we use quite a lot of coconut water, instant yeas, flour, sugar, coconut milk and others.there is a science that I received from chef ical regarding the portion of the ingredientsif the flour and sugar should fit the recipe while the leaves of citrus or lemongrass was sufficient resepi bika ambon kami membuat rasa pandanwe were four times from the initial recipe, we started mixing the ingredientsAfter that we leave the dough for 2 hours to expand after that we bake for about an hour, after we finish the general cleaning.
