DAILY REPORT PART 5 ( ENGLISH VERSION )

        Tuesday 26 February 2018 we are one line, absent, grooming and prayer at 08:10 am, today our material is rotation 1 which consists of appetizers, soups, main dishes, and dessers. My group got the soup section with a shrimp bisque menu, as usual before the dooing chef aldino explained to us about the rotation 1 menu, what is being prepared today for the restaurant open tomorrow and as some tips and techniques that we don't know, Examples of choux pastry and choux, choux pastry are dough, while choux is baking cookies and also chef aldino explains baked potato there are two ways: first way of baking potato with skin and salt,While the second way the potatoes are burned with aluminum foil plus seasoning.

        My group prepared the stock of shrimp, veloute sauce, cream and butter for shrimp bisque, today we only prepare the stock of shrimp, the rest we prepare tomorrow morning, the ingredients we need only shrimp skin, shrimp head, and water only. First our shrimps thawing an hour, separate heads, skins from shrimp, saute skin and shrimp head with batter and add a little wine reading, stir until dry, then put in stock pot, boil for 4 hours, boil in boiling process we also do skimmer to lift the foam on the stock so the stock is clear. In the manufacture of stock this time we do not use mirpoix or bouqet garnie because tomorrow in the process of making soup there mirpoix and bouqet garnie that we saute then mixed into the soup.




           

            After my work is done, I help my friend in the appe tizer section, and the desser,the help I gave such as chop anion and their slice french bread, after all I finished meeting chef aldino who was making cheeses from cream, the ingredients are very simple just with cream and lemon juice stew and filtered with clean napkins, once done. one line us because the chef aldino gave us an explanation of preparing the ingredients for the 2nd rotation, and also the aldino chef showed us the cheese at grana and gave us the taste, at 5:15 pm we did a general cleaning, as I used to be in that section. office and it makes me very happy.
